A spicy and fresh drizzle for summer, or to remember summer.
Ingredients
Two cups of fresh basil
1/2 shallot
1 lemon
1 red chilli
3 garlic cloves
1/2 cup of olive oil
Preparation
Roughly chop the shallot and the red chilli. Grate the rind and squeeze the juice from the lemon. Put all the ingredients in the food processor or grinder.
Method
Pulse until the ingredients are combined.
Add more olive oil to your preferred consistency.
Eating
Add to pizza or pasta dishes.
I love basil and in season I always have loads of it so I must remember to look here next season!
