Cinnamon

Cinnamon is known and widely used in both sweet and savoury dishes. It originates from the island nation of Sri Lanka, and was brought to Europe and Africa by Arab traders.

I have started using the cinnamon quills in fruit compotes and then extracting them at the end of the cooking process. This preserves the colour of the fruit and helps get a stronger flavour than using ground cinnamon.
